Sour cherry (Prunus cerasus L.) is a deciduous tree from the Rosaceae family, native species to Europe and Western Asia. The trees of species grow up to 4–10 meters, with smooth gray bark, serrated leaves, and white spring blossoms that produce bright red fruits. The cherries contain valuable pigments and phenolic compounds which provide antioxidant and anti-inflammatory benefits and support recovery processes.

  • Chemistry

Sour cherry extract contains anthocyanins, flavonols, and phenolic acids as its main constituents. The dominant pigments are cyanidin derivatives “cyanidin 3-rutinoside, etc…”, responsible for its red coloration and antioxidant function. Other key compounds include chlorogenic acid, neochlorogenic acid, quercetin derivatives, and melatonin, all contributing to its strong oxidative stress–modulating capacity.

Sour cherry extract preparations are utilized to help reduce post-exercise muscle soreness, enhancing recovery and sleep quality. Its anthocyanin contents support joint, cardiovascular, and metabolic health, while melatonin content helping circadian rhythm maintenance.
